Chop your veggies (fruits?)! Usually two or three mini cucumbers for every tomato, but play around with that ratio to your hearts content.

I love this recipe because I can make it in 10 minutes or less. It's great as a side, or in a pinch it can be a complete meal. It's got that great sweet/salty flavor combination of the balsamic and feta together and it's jam packed with all kinds of nutrient dense fruits, veggies, grains and legumes. Mmmm Mmmm Good
