They are super easy, amazingly healthy, and extremely delicious. We almost always have them paired with some sort of "breakfast" protein. Organic bacon, free-range chicken breakfast sausage, or these amazing maple bison sausages.
Here is the recipe for these flap jacks:
- 4 eggs
- 1/2 can pumpkin puree
- Approximately 2 tablespoons coconut flour (enough for desired consistency)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon all spice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon baking soda
Toss all the ingredients into a mixing bowl and whisk until smooth. If the batter is too runny add a little more coconut flour and if the batter is too thick, add a little water.
We generally cook these on the BBQ on top of a big cast iron griddle...it works amazingly well! Alternatively you can always cook these in a skillet.
Grease your griddle or skillet and turn onto medium-med. high heat. Spoon the batter onto the griddle or skillet in approximately sand dollar sized (3-4' diameter) pancakes. When a good amount of air bubbles appear in the pancakes, approximately 2-3 minutes, flip them over for another 1-2 minutes.
Remove from the griddle or skillet and enjoy! We like to put a little organic butter, almond butter, or a homemade berry compote onto our pancakes. If it is a special occasion we might drizzle on a little maple syrup.
