The drink itself is made by mixing tea, usually black, with a small amount of sugar, and a symbiotic culture of yeast and bacteria (SCOBY). The tea sits for about a week or two and goes through a fermentation process. Once complete, the liquid is tapped leaving the SCOBY behind that can be used later on to produce another batch of kombucha.
