Next time your family gets together to have a big meal, ask for the carcasses! :) This is so easy and it's always nice to have broth in the freezer for when you feel like a nice warm bowl of soup.
2 Tbsp Apple cider vinegar (don't skip this one, the vinegar helps to draw the minerals out of the bones)
1-2 Bay leaves (optional)
Place the chicken carcasses into a large pot, fill with water. Add apple cider vinegar and bay leaves. Bring to a boil, then reduce heat until just lightly simmering. Simmer with lid on for approximately 48 hours.
On to the Soup!
4 cups of your homemade chicken broth
2-4 cups of water (depending on how much soup you want to make)
4 large carrots peeled and sliced
1 small head of broccoli cut into bite sized pieces
1 large onion diced
4 stalks of celery sliced
1 - 1.5 Tbsp salt (depending on how much water you add)
Pepper to taste
Fresh flat leaf parsley (for sprinkling on top when soup is ready)
Place all ingredients except the broccoli and parsley in a large pot, simmer on low for about an hour. Add broccoli in last 15-20 minutes so it's not too soft. Sprinkle with parsley, enjoy!! :)
