Slice a small head of cabbage, drizzle with small amount of olive oil, add salt and pepper to taste, squeeze the juice of a fresh lime on it, and add 1-2 tablespoons of freshly chopped cilantro. Stir and set aside.
Mix about a third cup of mayonnaise (we use coconut oil based not your usually miracle whip) with roughly 1 teaspoon of adobo sauce (I add half of a chopped chipotle pepper that was in the adobo sauce, for some spice!). Add 1 tablespoon chopped cilantro and the juice of a fresh lime. Stir together and set that aside as well.
Lately we've been cheating a little with our guacamole. We live super close to the greatest little market and they have a guacamole mixture that you add 2 fresh avocado's to...and tadaa! You have delicious guacamole. Honestly though, I bet if you roughly mashed a few avocado's this would also be very yummy.
We have been using cod :) But really, use the kind you like best. We lightly season ours with a mango chipotle mix and BBQ it until flakes apart.
We just wash up some fresh romaine leaves :) No tearing required! Unless you want to make a fish taco salad...that is also a great way to eat these.
