There are a lot of great meals to be made, but my secret for pulling together something quick is breaking out the crock pot and prepping my meal the night or morning before. I'll show you a meal that took me 13 minutes to pull together from concept to crockpot on.
5:22 am I realize that I've fallen back asleep and I've got to get myself out of bed (admission: this happens more often then I'd like to admit, bad habit).
5:40 am after writing in my journal (good habit I've been building) I head down to the bathroom and wash up, brush my teeth, comb my hair.
5:50 am head back upstairs and grab some clothes (forgetting to put on a belt...Nicole Prefontaine would have given me a hard time if she would have run in to me today).
6:00 am walk down to the kitchen, start pulling things from the fridge for my lunch and something hits me -- I should prep something for supper for Tiff. She works hard every day with our baby boy and still manages to pull together great meals for me. I should do something nice for her. One problem, I've got a 7:00 am coffee planned downtown with some old work friends and I don't have much time to try and get a meal together.
6:02 am I remember that we have a couple of frozen pork chops in the freezer downstairs so I head down to the computer and Google quick healthy pork chop recipes and I find this:
6:09 am mince some garlic, pull some spices from the spice rack and shake a bit into a big measuring cup. Pour in the chicken broth, couple squirts of olive oil and add a little pepper to spice it up.
6:11 am wash and wrap up the potatoes in tin foil, set 'em aside to cook for later
6:14 am pour the marinade/sauce on the pork chops in the crock pot and put it on low!
DONE -- **nothing green in here, my wife was kind enough to cook up some oh so tasty asparagus to finish this meal off.
That is the easiest way to pull together a 15 minute meal (12 minutes if you're really counting). If you have some sort of protein in the freezer it really is that easy. Grab a few baked potatoes, sweet potatoes or you prep some white rice.
The slow cooker can run all day on low and the starch can be started the appropriate time before supper time. To round it out spend a few minutes tossing some veggies in a steamer or whatever your favourite method and you've got a healthy and fast meal in a pinch!
